Recipe: almost vegan; tofu, kimchi breakfast

Hello all. This is a random recipe I made up when I was trying to make myself a breakfast WITHOUT EGGS, but with fish sauce lol

I’ve been vegetarian since forever, and it was so hard for me to find what to eat. Luckily I got some tofu and decided to make a sort of scramble. Here’s the recipe for you all!

(I made the mistake of buying kimchi that had fish juice in it, so  I was close to making this a completely vegan breakfast!)

Ingredients and junk:

  • Firm tofu (I like it firm but you can do whichever)
  • Mushrooms (as many as you like, they get tiny when you cook them so I like a lot)
  • 1 Tomato
  • 2 Garlic cloves
  • Kimchi
  • Spinach
  • 1 pan to cook
  • some olive oil/cooking oil

Optional ingredients:

  • Lemon or Lime for extra flavor
  • Dried Seaweed
  • Soy sauce
  • cooked Nopales (already cooked cactus)
  • Beans
  • Cilantro
  • Cumin Powder
  • Black pepper

All u need is what is pictured above and some olive oil /avocado oil or whatever you prefer.

Step 1:

Read this if you don’t know how to cook tofu:

you need to drain the container the tofu came in first. Wrap the tofu in paper towels and let it dry up. You can place about 5 stacked plates on top of the tofu that’s wrapped up so it can soak up the water quicker. Do this while you cut up the ingredients and let the pan heat up. Images below!

This is my leftover tofu that i put in my own container. Cut off the browner parts, not sure what it is but I guess the water didn’t cover it much so it got brown. Place it on the napkin.

This is my tofu being soaked up. Once the napkin has soaked up all the water, chop the tofu in as many pieces as you like.

Step 2:

Now, once you make the toast toasty brown like you see down below you can then add in the next ingredients.

What I like to put in next is garlic and mushrooms.

Tofu scramble
by the way, you’re cooking on medium depending on how toasty you like your food. I like my tofu almost crunchy on the outside so it’s usually high at first then on medium when i get to this step.

 

Why do I like to put in these 2 ingredients next? Well I like the taste of mushrooms when they’re more cooked than my tomatoes and spinach. Think about that when cook with this stuff guys, spinach shrinks up so I like to leave that last.

 

Step 3:

This is a good time to add your black pepper and cumin powder if u want some flavor!

Tomatoes and Nopales are in the pan now. Yummy, it’s looking better n better.

Make sure the cactus is already cooked before doing this.

If not, you should cook alongside with the mushroom or tofu since I believe they need to be cooked to eat.

Ingredients
These ingredients are left. These are optional but I think the whole dish tastes better with these.

 

Step 4:

Kimchi is part of this dish but honestly it tastes great how it is now. You can add the beans and the kimchi in the pan if you like, but I recommend cutting the kimchi up a bit.

You can add the beans in the pan or just eat them on the side. Either way you want to eat it tastes amazing!

 

Add everything together including lemon or lime there’s no difference for me but I heard lemon is best to eat with every meal. Cilantro and dried seaweed sprinkled on top tastes great.

Hello, it’s delicious.. but my only thoughts are that I put too much kimchi in mine. I also didn’t cut the kimchi or spinach so it was a bit stringy and took forever to chew lol
